- 5 green apples, peeled and chopped into 2cm slices
- 1 tbsp ground cinnamon
- 1½ cups brown rice, rinsed well
- 2 x 400ml cans full-fat coconut cream
- 4 -5 cups water
- 5 Medjool dates, roughly chopped
- ½ tsp ground nutmeg (optional)
- ½ tsp ground cloves (optional)

- Arrange half of the sliced apples on the bottom of the slow cooker and then add the washed brown rice on top.
- Simply add the spices, coconut cream, water, and dates. I usually prefer to use water instead of coconut cream, as it’s a more convenient option!
- Next, simply add the rest of the apple on top. Cook on low for 4 hours and then let it switch over to the ‘keep warm’ function for another 3 to 4 hours. If your appliance doesn’t have a ‘keep warm’ function, simply cook it on low for 4-5 hours and let it sit overnight to allow the liquid to be fully absorbed.
