Slow Cooker Chinese Barbecued Chicken Thighs

Recipe Ingredients

  • 2 tablespoons of hoisin sauce
  • 2 tablespoons of ketchup
  • 2 tablespoons of honey
  • 1 tablespoon of soy sauce
  • 1 tablespoon of dry sherry (or cooking wine)
  • 1 ½ teaspoons of toasted sesame oil
  • 1 ½ teaspoons of freshly grated ginger
  • 1 garlic clove, minced
  • ½ teaspoon of five-spice powder
  • 8 bone-in chicken thighs (5 to 7 ounces each), trimmed
  • Vegetable oil spray, for coating

Step-by-Step Directions

  1. Prepare the Slow Cooker: Lightly spray the inside of your slow cooker with vegetable oil to prevent the chicken from sticking during cooking.
  2. Mix the Sauce and Coat the Chicken: In a bowl, stir together hoisin sauce, ketchup, honey, soy sauce, dry sherry, sesame oil, ginger, garlic, and five-spice powder.
  3. Add Chicken and Cook: Place the chicken thighs in the slow cooker. Pour half of the sauce over the chicken and turn them to coat evenly. Cook on low for 4 to 5 hours.
  4. Preheat the Broiler: Set your oven rack 6 inches below the broiler and preheat it. Line a baking sheet with aluminum foil and place a wire rack on top, spraying it lightly with oil.
  5. Broil the Chicken: Transfer the chicken thighs to the wire rack, discard the cooking liquid, and broil for 10 minutes. Flip the thighs halfway through to ensure even browning.
  6. Brush with Sauce and Broil Again: Brush the chicken with half of the remaining sauce. Broil for 5 minutes, flip, brush with the rest, and broil until lightly charred.

Recipe Tips

  • Add some vegetables: Throw in sliced bell peppers, onions, or carrots to cook alongside the chicken for a complete meal that’s flavorful and nutritious.
  • Use fresh ginger: For a more vibrant flavor, always use freshly grated ginger instead of pre-ground ginger. It gives the dish a more authentic and aromatic taste.
  • Adjust the seasoning: Taste the sauce before adding the chicken. If it needs more sweetness or salt, adjust with extra honey or soy sauce to match your preference.
  • Broil for crispiness: If you prefer a crispy skin, ensure to broil the chicken long enough until the skin is well-browned and slightly charred. This adds great texture and flavor.
