To make Dirty Cajun Rice in your slow cooker or crockpot, cook the pork and spices on high for 3 hours, then add rice and stock and cook for 45 minutes more.

- Prepare the pork and onion: Toss the pork strips and chopped onion in a mixture of hot sauce, dried coriander, ground cumin, chili flakes, celery salt, Cajun seasoning, garlic purée, Worcestershire sauce, and dark soy sauce until well coated.
- Prepare the slow cooker: Add the seasoned pork and onion mixture to the slow cooker along with 100ml of the chicken stock. Stir well to combine.
