Slow Cooker Honey Mustard Chicken

This Honey Mustard Chicken recipe is another of my go-to dishes from the Bored of Lunch cookbook – It’s low in calories and doesn’t require oil or butter, using chicken breasts, honey, wholegrain mustard, Italian seasoning, and garlic.

To make Honey Mustard Chicken in your slow cooker or crockpot, place all ingredients except the cream cheese into the cooker, season well, and cook on high for 3 hours. Stir in the cream cheese before serving.

Slow Cooker Honey Mustard Chicken Ingredients

  • 4 chicken breasts
  • 4 tbsp of honey
  • 2 tbsp of wholegrain mustard
  • 1 tbsp of Italian seasoning
  • 4 cloves of garlic, crushed
  • A handful of fresh basil leaves
  • 175ml of chicken stock
  • 1 tbsp of cornflour (optional, for thickening)
  • 1 tbsp of water (optional, for cornflour paste)
  • 90g of low-fat soft cream cheese
  • Fresh basil leaves, for garnish (optional)
  • Salt and pepper, to taste

How To Make Slow Cooker Honey Mustard Chicken

  1. Prepare the chicken mixture: Place the chicken breasts, honey, wholegrain mustard, Italian seasoning, crushed garlic, fresh basil, and chicken stock in the slow cooker. Stir the mixture thoroughly to combine all ingredients. Season with salt and pepper according to your taste preferences.
  2. Cook the chicken: Cover the slow cooker and set it to cook on high for 3 hours. This allows the chicken to become tender and fully absorb the flavors of the honey mustard and herbs.
  3. Thicken the sauce (optional): If a thicker sauce is desired, mix the cornflour with 1 tbsp of water to form a paste. Stir this paste into the slow cooker about 30 minutes before the end of the cooking time to help thicken the sauce.
  4. Add cream cheese: Once the cooking time is complete, gently stir in the low-fat soft cream cheese until well combined and the sauce becomes creamy.
  5. Garnish and serve: If using, sprinkle fresh basil leaves over the chicken as a garnish. Serve the honey mustard chicken hot, ideally accompanied by steamed vegetables or a light salad to complement the creamy sauce.
