Recipe Ingredients

  • 150ml / ¼ pint hot chicken stock ( 2/3 cup)
  • 175g / 6oz ( 1 cup) smooth peanut butter
  • 1½ tbsp sunflower oil
  • 1 onion, halved and thinly sliced
  • 1½ tbsp finely chopped ginger
  • ½ tsp cayenne pepper (optional)
  • 2 tsp each ground coriander and cumin
  • 1 Scotch bonnet chilli, deseeded and chopped
  • 1 bay leaf
  • ½ x 400g can ( 1 x 14oz can) chopped tomatoes
  • 800g / 1.75lbs pack chicken thighs and drumsticks, skin removed
  • 2 small sweet potatoes, cut into big chunks
  • 1 red pepper, deseeded and cut into chunks
  • Good handful of coriander, roughly chopped
  • Rice, to serve (optional)
  • Lime wedges for squeezing over (optional)

How To Make Slow Cooker Spicy African Chicken & Peanut Stew

  1. Prepare the Peanut Stock & Fry the Spices: In a jug, pour the hot chicken stock over the peanut butter and stir until dissolved. Heat the sunflower oil in a frying pan and fry the onion, ginger, cayenne (if using), black pepper, ground coriander, cumin, Scotch bonnet chilli, and bay leaf until the onion is softened. Tip the mixture into the slow cooker pot.
  2. Add Remaining Ingredients: Stir in the chopped tomatoes and peanut stock, then add the chicken pieces, sweet potatoes, and red pepper to the slow cooker. Cover and cook on Low for 7–8 hours until the chicken is tender. Season to taste and stir in most of the chopped coriander.
  3. Serve: Serve the stew sprinkled with the reserved coriander, along with lime wedges for squeezing over, and rice, if desired.

Recipe Tips

  • Use good quality peanut butter:  Choose smooth, unsweetened peanut butter for the best creamy texture and flavor. Avoid peanut butter with added sugar or salt.
  • Adjust the heat level:  If you like it milder, use less cayenne pepper and remove the seeds from the Scotch bonnet chilli. If you prefer more heat, leave some seeds in.
  • Cut sweet potatoes into uniform chunks:  Make sure the sweet potatoes are cut into similar-sized pieces so they cook evenly and become tender at the same time.
  • Sear the chicken first (optional): For extra flavor, quickly sear the chicken thighs and drumsticks in a hot pan before adding them to the slow cooker. This step adds a richer depth of taste.
  • Stir in coriander at the end: Add most of the chopped coriander just before serving to keep its fresh flavor intact. Reserve some for garnish on top.
