How To Make Slow Cooker Chicken Parmesan Meatloaf

  1.  Combine the ingredients: In a large mixing bowl, combine the ground chicken, beaten egg, breadcrumbs, Italian seasoning, minced garlic, and shredded Parmesan cheese. Use your hands to mix gently but thoroughly to avoid over-mixing.
  2. Shape and place in slow cooker: Shape the mixture into a round loaf and carefully place it into a 6-quart (6-L) slow cooker.
  3. Cook the meatloaf: Cover and cook on high for 3 hours or on low for 6 hours.
  4. Add marinara and mozzarella: Spoon the marinara sauce over the meatloaf and sprinkle with shredded mozzarella cheese.
  5. Rest and serve: Let the meatloaf rest for 10 minutes before slicing and serving.
