  • 1 large carrot, finely chopped
  • 2 celery stalks, finely chopped
  • 2 garlic cloves, finely chopped
  • 3 tablespoons tomato paste
  • 2 x 400 g (14 oz) cans chopped tomatoes
  • 375 ml (1½ cups) beef stock
  • 1 teaspoon raw sugar
  • 2 bay leaves
  • 6 thyme sprigs, leaves picked
  • pasta, chopped parsley, and grated parmesan, to serve

How To Make Slow Cooker Ultimate Bolognese

  1. Brown the Meats: Heat the olive oil in a large, heavy-based pan over medium-high heat. Add the ground beef, sausage meat, and chopped bacon, cooking for 5 minutes or until browned, breaking up any clumps with a spoon. Drain any excess liquid, then transfer the meat to your slow cooker.
  2. Sauté the Vegetables: Lower the heat to medium and melt the butter in the same pan. Add the chopped onions, carrot, celery, and garlic, cooking for about 3 minutes until the vegetables begin to soften, stirring occasionally to avoid burning.
  3. Incorporate Tomato Paste: Stir in the tomato paste and cook for another 3 minutes, letting it combine fully with the vegetables. Transfer this vegetable mixture to the slow cooker with the browned meat.
  4. Add Remaining Ingredients: Pour the canned tomatoes, beef stock, raw sugar, bay leaves, and thyme leaves into the slow cooker. Give it a good stir to mix everything well.
